Summer Peach Salad with Balsamic Vinaigrette - Light and refreshing, this Whole30 peach salad is full of flavor and perfect for a hot summer day. The tender peaches, juicy tomatoes, and tart balsamic will pair well with any grilled meat or fish you're making this summer.

I recently spent almost two weeks at home in Georgia with my family. It was initially only supposed to be a 3-day trip {I only packed four days worth of clothes}. It was nice getting to spend extra time with my family without worrying about work! I used that time to share a few of my favorite recipes with my family, one being this salad. My dad loved it and told my mom to make sure they had the recipe before I come home. I promised them I would post it on the blog.

I typically serve this salad with grilled or roasted meats like chicken wings or grilled shrimp. It makes a nice, light meal for hot or busy days.

Summer Peach Salad

When making a simple salad like this, you'll want to use the freshest, tastiest peaches and tomatoes you can find. They're the star of this salad, and flavorless peaches will make for a sad, tasteless salad.

Tips for buying ripe peaches

  • Look - Smooth skin and no visible bruises.
  • Smell - If a peach smells... peachy, that is a good indication of how it will taste. No smell will likely mean little taste.
  • Feel - Lightly squeeze the peach. If it's hard like a softball, it's not ripe. Harder peaches will need a few days before they're ready to eat. If it has a little give, it's perfect for salad. Peaches that bruise when squeezed are very ripe. They're great to eat as is or add to a smoothie. If baking, use firmer peaches. They will hold up to the cooking process better than soft peaches.

Recap: For this salad, look for peaches that have smooth skin and no visible bruises, smells like a peach, and has a slight give when squeezed - think tennis ball.

For the tomatoes, you can use any style you like. Heirloom, Roma, cherry, or large garden tomatoes all work. Chop larger tomatoes into bite-size pieces so they're easier to eat.

When picking a base of the salad, choose a tender green like spinach, arugula, or spring mix. You could use iceberg lettuce if you like {I personally would go with something else, but this is your salad! You do you!}.

Ingredients needed for the Summer Peach Salad

  • Ripe Peaches - Sliced
  • Tomatoes - Cut into bite-size pieces {Roma, Cherry, or Heirloom will work}
  • Red Onion - Thinly sliced
  • Lettuce - Spring Mix, Spinach, or Arugula
  • Toasted Nuts - Optional but sliced almonds, cashews, or pecans add a nice crunch. Add these when serving to keep them crunchy.
  • Feta Cheese - Another optional topping, but feta pairs well with the peaches and tomatoes! Omit if Whole30 or Paleo.

Ingredients for the balsamic vinaigrette

  • Good quality Extra Virgin Olive Oil
  • Balsamic Vinegar - Red Wine, Apple Cider, and Champagne Vinegar work great too!
  • Garlic Powder {You can use fresh minced garlic, but it can overpower the dressing. Dried granulated garlic has a milder flavor and melts into the dressing better}
  • Salt and Pepper

Vinaigrette Variations

You can substitute red wine, apple cider, or champagne vinegar {<-This is my favorite and works great in this salad!} for the balsamic vinegar if you want to change things up. This vinegarette is excellent on any salad or as a marinade for chicken.

Make-Ahead and Storage

Besides the fact that this salad is super easy and flavorful, it can also be made ahead of time and makes excellent leftovers. Making the peach mixture ahead of time and letting it marinade is recommended as it enhances the flavors.

To prep, this salad, prepare the peach and tomato salad with balsamic vinaigrette. Chop the veggies and fruit and make the vinaigrette. In a large bowl, combine the peach mixture with the dressing. Store in the refrigerator until you're ready to serve. Once ready, toss the peach mixture with your lettuce of choice. Do not mix the peaches with the lettuce if making this salad ahead of time. The lettuce will wilt and become soggy.

Helpful Tip - If you made the salad in advance, remove from the refrigerator 15-30 minutes before serving to allow the peach mixture to come to room temp. Olive oil can solidify in the fridge. Resting at room temp enables the dressing to soften before adding the lettuce.

Once ready to serve, spoon the peach mixture over the salad and toss to combine. Add extra dressing if needed.

Summer Peach Salad

  • 2 ripe Peaches - sliced
  • ¼ Onion - thinly sliced
  • 1 cup Tomatoes - diced or halved
  • 16 oz Lettuce of choice - Spring mix, arugula, spinach, etc.

Balsamic Vinaigrette

  • cup Extra Virgin Olive Oil
  • ¼ cup Balsamic Vinegar - {Apple cider, red wine, and champagne vinegar work as well}
  • ¼ teaspoon Garlic Powder
  • ¼ teaspoon Fresh Ground Black Pepper
  • Salt to taste

Summer Peach Salad

  1. Combine the peaches, tomatoes, and onion in a large bowl. Pour on half the vinaigrette, reserving some of the dressing for the lettuce.
  2. Allow the mixture to sit on the counter for several minutes for the flavors to marry together.
  3. Place the lettuce in a large bowl and spoon the peach mixture over the top. Add extra dressing if needed. Serve and enjoy!

Balsamic Vinaigrette

  1. Combine all the ingredients in a jar with a lid. Add the lid and shake to combine.

Notes

The peach mixture makes a great make-ahead meal, but keep the peaches and lettuce separate until you're ready to eat.
